Ugadi is the traditional Telugu New Year. Its time to prepare the traditional Ugadi Pachadi. In Andhra Pradesh, people prepare "Ugadi Pachadi" with neem leaves, raw mango, jaggery, green chilli, tamarind juice and a pinch of salt. The above mentioned ingredients symbolise six tastes - bitterness, sweet, tang, sourness, heat and saltiness corresponding to six experiences of anger, happiness, disgust, sadness, fear and surprise.
Ingredients:
- 4 tsp chrushed jaggery (gur)
- 2 tsp neem flower
- 1/2 tsp red chilli powder
- one small lemon size ball of tamarind made into thick tamarind water (imli)
- 1/2 tsp mustard seeds(rai dana)
- Salt to taste
- 1 tsp oil
- 1 tbsp finely chopped raw mango
- 1 c water
How to make ugadi pachadi:
- First of all add the raw mango pieces to the tamarind water and boil it
- Boil till mango pieces become tender
- Thereafter, add jaggery and cook till it melts and blends smoothly into the mixture
- Remove it from the heat and keep aside
- Take a pan, heat oil and add mustard seeds and let the seeds splutter; add neem flower and fry it till it gets light brown
- Now add chilli powder and salt and mix well
- Take the neem flower material and add it to the tamarind and mango juice
