Bharwan Baingan recipe | How to Make Bharwan Baigan | Stuffed Baigan


Ingredients Required for Bharwan Baigan:

½ kg small and round brinjals/Baingan

For filling/Stuffing
1 tsp roasted & powdered ajwain
¼ tsp asafoetida/Heeng
2 tsp ginger paste
1 tbsp gram roasted till slightly discoloured flour
Salt to taste
½ tsp turmeric powder
½ tsp chilli powder
1 tbsp coriander powder
½ tsp fenugreek seeds- roasted and pounded coarsely
1 tsp fennel seeds-roasted & coarsely pounded
½ cup mustard seeds
20 gm tamarind- well soaked in water and strained
1 tbsp ginger/adrak- finely sliced to garnish


How to Prepare Bharvan Baigan (Method):

1. Firstly wash and wipe the brinjals and then slit them vertically from bottom towards thestalk, just short of the stalk, dividing first into half.
2. To fill the masala/ mixture of spice etc make another slit dividing each into quarters

3. Now, stuff the mixture into brinjals.
4. Heat oil in a pan; let it cool to get rid of the pungent smell.
5. Finally, add brinjals and mix and turn around a few times on high heat and then reduce the heat, cover the brinjals and cook till they get tender. Keep stirring a few times in between.
6. Your Bharwan Baigan is ready to be serve hot, garnished with sliced ginger.
