Baingan Bharta is one of the most popular food items of the people from the Indian sub-continent. Baigan ka Bharta has a great and a distinctive flavour due to the use of mustard oil and raw ingredients in it. It is interesting to note that everything except the Baingan/eggplant (which is roasted) is used raw.

Baingan Bharta is a healthy food as it is low in fat and sodium and high in dietary fiber, magnesium, vitamins C and B6, pottasium and phosphorus. With the addition of tomatoes, green chillies and onion its flavour and nutritional value too increases.


Ingredients Required:

1 Baingan/eggplant
1 Finely chopped large tomato
1 Finely chopped onion
2 Finely chopped green chillies
7-8 cloves of chopped garlic
1/4 cup chopped coriander
Salt to taste
1/2 lime
2 tbsps mustard oil


Preparation of Baingan Ka Bharta:
Roast the Baingan/eggplant on medium flame fire till the whole skin is burnt and the eggplant becomes soft.
Now, peel off the burnt Baingan skin and remove the stem of the eggplant.
After removing the burnt, mash the Baigan/eggplant roughly.
Add the mustard oil, tomato, onion, garlic, green chillies, coriander leaves and salt to taste and Mix well.
Add some drops of lime juice and mix the whole stuff well.
Serve in combination with plain boiled rice and garlic-flavored dals or plain boiled rice and Rajma.
