Aaloo paratha is a popular and easiest recipe of northern India. These are Parathas stuffed with spiced mashed potatoes and then cooked on hot tawa with ghee or butter.
Ingredients for 6 parathas:-
For dough :-
3 cups wheat flour
1/4th cup wheat flour for dusting
2 tbs. ghee / butter / oil
Enough water to make dough
5-6 tsp ghee or butter for frying paratha’
Salt to taste
For stuffing/filling:-
4-5 potatoes
2-3 green chillies, finely chopped
Handful of coriander leaves, finely chopped
1/2 tsp. Garam Masala
1/2 tsp. amchoor
1/4 tsp. red chilly powder
1/2tsp. ginger, finely chopped
Salt to taste
Method:-
For stuffing
Take boiled potatoes (should not be over boiled),keep them at room temperature for 5-10 minutes. Now mash them with your hands or masher. Now add chopped green chillies , coriander leaves (chopped), 1/2 tsp. garam masala, 1/2tsp.amchoor powder, 1/4tsp.red chilly Powder, 1/2tsp. ginger(finely chopped) to the mashed potatoes, this mixture should be dry, otherwise it would be difficult to make paratha.
Making dough
(you can make it while potatoes are boiling)
Sieve flour. Add salt, oil or ghee and Add water (little at a time). Knead into medium soft dough. Dogh should not be very tight . We can also use food processor for making dough. Keep it aside for 10-15 min.
Rolling out parathas
Divide the dough and stuffing into 6 equal balls, take a ball of dough and make a small puri, Now put a ball of stuffing(potato filling) over it, close it from all sides. Gently pat the stuffed puri in the palms, apply some flour on both sides and roll it gently into a paratha. Now cook it on a hot tawa, allow one side to cook, till the time brown spot appear on it .Now turn the paratha .Follow the same procedure for this side also.Put some ghee or butter on each side and flip. Take out the paratha from tawa and paratha is ready to serve. Serve it with some butter and yogurt .
