Ingredients :-

For chole:-
• 1 cup Chole ((Wash and soak chole overnight. Pressure cook with little salt and water for 15 - 20 minutes.)
• 2 tbs ginger-garlic paste
• 2 tbsp tomato puree
• 1 medium tomato finely chopped
• 1 medium onion finely chopped
• 2 Green Chillies finely chopped
• 1 small stick cinnamon
• 1 tsp cumin seeds
• 1/2 tsp Chilli powder
• 1/2 tsp Turmeric powder
• 2 tsp Channa / chole Masala
• Coriander leaves finely chopped
• Salt to taste
• 2 tbsp Oil

For Batura/Bhature
• 1 cup white flour (Maida)
• ¼ cup plain flour for dusting
• 1 cup potato, boiled and grated (1 large potato)
• 2 tsp oil for making dough and 2cups oil for deep frying
• Salt to taste

Method:-
Take oil in a heavy skillet, and heat it on medium flame. Add cumin seeds and cinnamon stick to the oil and allow it to crack. Add chopped onion, ginger/garlic paste and green chillies and sauté till the onion turns golden brown. Now add turmeric powder, chilly powder and sauté for 3-4 minutes. Then add tomato puree and chopped tomato and sauté. After 2 minutes you will see that oil separate from other things. Turn the flame from medium to low, now take boiled chole and add it to the skillet along with 1 cup water and salt and mix well. Leave it for 15-20 minutes. Now garnish chole with coriander leaves and chopped onion.
Sieve flour in a bowl, add grated potato, salt and oil and knead without using water, the dough should be smooth. Leave it for 10 minutes by covering it with muslin cloth. Heat the oil in a skillet for frying batura. Now take dough and roll it into medium sized circles and make puri out of it, fry it in skillet containing oil till it become golden brown from both sides.
Serve hot with the chole , sliced onion and lemon wedges.
